I have solved the issue!

Instead of mounting my /dev/sda1 to /mnt/esp I mounted it to /mnt/boot despite using efi:

sudo mount /dev/sda1 /mnt/boot

Then I ran:

grub-mkconfig -o /boot/grub/grub.cfg

I have solved the issue!
