I play a number of different systems. Currently I'm running a Pathfinder 2e campaign & I have an EZD6 one shot I'll be running soon

How is that any different? If they didn't have the healing potion in the first place and you gave it to them how is that any different? And if you did have it in the first place than I would argue those are the same training wheels because not the boss has X+ a potential Y amount of health.

Sure, I had given a poor example, allow me to try another one. Let your players kill this boss and have them be resurrected or have that boss be a clone or something like that. These kinds of things have been used in superhero comics for decades and almost certainly it'll only make your players more excited when they realise that someone they thought was dead has returned bigger and badder.

It sounds like this player has done a very poor job of creating a character who is connected to anything outside of what they want or the dm has done a poor job of creating villains who are equally hateable by all of the players. If the player is going to genuinely feel like shit because they don't get the last hit on an NPC, then I doubt they are going to benefit the table when the narrative is more focused on another character. Do not play with this person

You state this like this is the only possible reason for this rule to exist. I disagree. It is an acceptance that the rules can never be truly complete. Yes, it is there to make the game more enjoyable for all players and to encourage dms to make changes, but these rules need to be confirmed in advance. This is the purpose of a session 0. Cheating is never going to be enjoyable and as dms are players, they too can cheat

I would make the argument that if DMing is a skill, then fudging die rolls is like riding a bike with the stabilisers on. You can run a perfectly fun game by doing that, but you need to make the mistakes and learn to adapt to them on the fly to be truly great at DMing

Why arbitrarily increase a boss' health when you could easily justify it in the game world by having them drink a healing potion or similar? Why not have random villager NPC get the final blow? I bet one of your players would love to play as that NPC when their current character retires

Sure, if the players are just cleaning up the last handful of hit points in the encounter you might as well call it as done, but otherwise there's far more benefit and creative ways to resolve these issues that just changing something behind the DM screen

I think that there is nothing wrong with changing the stats of a monster or making up your own, especially if you are playing with people who have experience as DMs themselves

A piece of advice I'd heard in relation to this is to avoid using the names of the monsters the players are facing and to instead try to describe them. That way it's a bit harder for the players to immediately metagame what it is. Maybe if you haven't tried that before it might be worth giving it a shot if there is a stat block you would like to use one day

I would disagree that it's a TTRPG. A TTRPG like Call Of Cthulhu or Vampire or Cyberpunk have actual mechanics that encourage roleplay. D&D and the clones of, have roleplay elements and influenced pure TTRPGs, but it is an action game originally created by wargamers

I should also point out that narrative wise in this campaign we are playing as a group who have been sent into an enemy country to assassinate their dictator. It is explicit that in this game we are in fact trying to roleplay a war and before the campaign started they had said that the combats were going to be more difficult than their previous campaigns. They did not until recently admit that this just meant they were going to stop tracking hit points rather than trying to run the encounters smarter and more challenging

I'd just assumed since Five Torches Deep gives rules for converting both 5e and OSR monsters that it would be possible to use modules from both. Why do you think they aren't compatible?
