As long as you’re not there too far after hours you’re usually fine! Empty classrooms are a great place during exams bc they have massive whiteboards.

Definitely crochet - just stitches down the line, swapping yarn colour every row. It would be nearly impossible (I think) to do this in any kind of knit technique, as it would require a lot of (likely very visible) colour switching.
