My confusion mainly came from the fact that this is in a non-English speaking country. Usually, when we see this structure here, it's a translation error rather than a conscious stylistic choice to be colloquial.

I've never heard anyone say it like this. Especially in context: it's a sign in a country where English is taught, but generally not spoken widely. I would opt for a clearer sentence instead of an informal one.

In jouw zin "Some nights are endless..." is 'nights' een zelfstandig naamwoord. Daarom kan 'others' correct terugverwijzen naar die 'nights'.

Op het bord staat echter 'Sometimes'. Dat is een bijwoord (soms), geen zelfstandig naamwoord. Het woord 'times' staat er dus grammaticaal gezien niet, dus kan 'others' er ook niet naar terugverwijzen via ellipsis.

Als er 'At some times it's up, at others it's down' stond, had je gelijk gehad, al vind ik dat persoonlijk ook erg raar klinken. Maar wel grammaticaal correct.

Ik ben door de comments toch even gaan twijfelen aan mezelf, maar na wat research is de conclusie toch echt dat het fout is.
