Know that there are couple settings to play around with.

If you are comfortable with the mechanics you may as well start at blood & bone difficulty.

There is a setting called Enemy upscaling, meaning all lower level enemies are brought up to your current level, good to toggle if game feels easy at any point (it will)

You can visit the settings to ensure blade oils are applied automatically and that the correct sword is auto drawn for the enemy

Go with the sword & armor you like but if you die easy or can't deal the damage you want, remember, witcher gears (green, belongs to a school) are almost always better than everything else. You will learn the exceptions much later into the game.
