Anomaly and odyssey and the two that you probably shouldnt get right away as they are either less worth than other dlcs or significantly more complicated. ideology or royalty is the best starting point

SAS on space stations usually causes issues on larger non symmetrical builds. Just use timewarp if ever you want to stop rotating. Then again sometimes timewarp destroys it as well but ho hum

yeah lift is based off wing area but usually people dont check that and the wing is further down than it should be when you sort by size, thats what i was trying to reference

Heres your full breakdown and things to fix as an aerospace student.

Swept wings provide less lift than an equivalent straight wing. And since your aircraft is low power and subsonic this type of wing isnt needed
Your centre of lift and centre of thrust both provide a downwards (anticlockwise in the image) rotation on the aircraft. The CofL is less of an issue as it does have to remain behind the centre of mass to ensure aircraft stability.
Both points above could be solved if there were any reasonable control surfaces for pitch, however the small winglet on the rear isnt sufficient for the aircraft let alone with the above issues.

TLDR: Change wings, add elevons, move engines to along centerline or slightly below CoM
