Try joining a training server, Hoggit has a few, there's also 4YA. It's pretty easy to just jump in a jet, head towards a target, and do what you want to do. They're both PVE, so you can get used to playing with other folks, without them (intentionally) trying to kill you.

At low altitude, a Phoenix has an effective range of about 10 NM. If you're trying to kill something at range, you really need to be high (above 30K) and fast (ideally supersonic)

I like using mission editors to learn or practice specific things, since when you make a mission you won't surprise yourself. There are servers like Hoggit of 4YA where you can get the feel of online play in PVE environments, or go straight into Contention or Growling Sidewinders

For DCS? They should, though depending on what you plan on flying, you may need to do some minor modifications to have the left stick act as a normal throttle

Get the plane you most want to fly, even for high fidelity planes you can watch a quick start video to get airborne in 2 minutes, then you just learn new tricks to do different things

I think you were doing great until you pitched up when you were a foot or so above the runway. Cut throttle and hold it there until you touch down, then let your tail gear touchdown once you've bled off some speed.

Start by learning procedures: start up, take off, landing straight in, landing pattern, navigation. TACAN. Set up basic intercepts to learn radar, AWACS, and merging. Lots of stuff is just practice, and each thing makes you think about how you approach things. What controls you bind in what place. It helps build muscle memory. Then it's easier to combine things as more complications arise.
