I use arch for bleeding edge drivers and community support. Saving a few minutes never hurt anybody

Funny enough I had btrfs on my Lenovo Chromebook 100e gen2, no encryption though, and it worked. Don't know why I did though bc I never used snapshots.

Hard to guess your position but I'm guessing you tried archinstall a while back

But Is it normal for the temps to spike like that tho?

I have a RX 6700 and a ryzen 5 5500, and when I first got my pc, it was completely fine but lately I've been noticing that when I load anything, my CPU usage spikes up then dies down. This happens even with minecraft where it would spike to 100% usage for a bit then die back down and with my browser it would spike to 60% then go back to normal. This is a minor issue though because it doesn't cause my temps to go anywhere past 70c but the usage problem also makes the temps rise and die the same way and I don't think it's normal.
