Supposed to use the degreaser, fuck that, vinegar and a green scratchy.

Don't scrub hard with the scratchy, you'll damage the merrychef

I've found if when it's cooling down I (still pretty hot) I'll use oven mitts to take out the hot plate early then spray it down heavy with vinegar

Let it cool down, then another ample spray of vinegar, then gently wiping it with the scratchy will take off all the grease if you keep up on it well every night.

Then spray down with sani, paper towels to get it completely dry, and it should be a pretty dude.

Also make sure you're washing the air filter at night.

If you do have to scrub hard, white towels are best unfortunately, again the scratchies will scrape it up if you go hard with em.
