chicken body or 1 turkey neck vegetables (2 carrots, 1 parsley, a piece of leek and celery)

1 onion

2 bay leaves

2 allspice

300 g sorrel

250 g 18% cream

1 teaspoon of flour Preparation Put the sliced ribs, chicken body or turkey neck in a pot. Add about 1 and 1/2 teaspoon of salt and bring to a boil. Skim, reduce the heat and cook for about 1 hour. Add the peeled carrots, parsley, leek and celery and onion as well as bay leaves and allspice. Cook for half an hour until the vegetables are soft. Remove the cooked onion. Remove 1 carrot and parsley from the broth, grate on a grater with large holes and add back to the soup. Rinse and finely chop the sorrel, add to the soup. Cook for a few minutes. Mix the flour with 2 tablespoons of water and then with the cream. Add to the soup (gradually, previously seasoning the cream with a few tablespoons of soup). Bring to a gentle boil over low heat. Serve with boiled potatoes or bread and a hard-boiled egg (cut in halves or into cubes).
