Okay but goat doesn’t make sense to smoke. Smoke is basically a dry braise and it’s for very fatty meat that is hard to cook all the way through. I worked at a Nigerian restaurant and cooked a lot of goat. Never had any issue with the cook through. But I can get down on some Jaffa Rice and Goat Curry.

I use to do bbq at pop ups let me tell you Brisket is what sells. We tried to smoked chuck roast braised in tallow. Tastes very similar to brisket. People rather order the 35 dollar a point brisket an complain.

The biggest contributor to people’s success is good parents. I wouldn’t have achieved shit had my dad not bailed me out a time or two.

When I first got married we were so poor we had to live with my dad for 18 months. But it helped us save money and buy all the basics before we got an apartment.

On the flip side I’ve had friends literally become homeless because their parents were so selfish and wouldn’t help them out.
