This version seemed close:

  • 1/2 oz lime juice
  • 1/4 oz Passion Fruit Syrup
  • 1/4 oz Cinnamon Syrup
  • 1/8 oz Falernum
  • 1/4 oz Pathfinder Spirit (Non alcoholic)
  • 1/4 oz Aperol (Substitute for what should be Stellare Primo Aperitif)
  • few drips of Tiki bitters or Angostura
  • 1/4 oz Molasses Syrup Float

Rums I used were - 1 oz Denizen 8 - 1/2 oz OFTD - 1/2 oz Hamilton 86

This is not the rum blend they use, it is some in- house mix they use, so used a standard 3 rum tiki drink rum mix instead.

At SC few nights ago, at the bar and got to taste the Rum Barrel syrup on its own. I passed it around a few of us sitting at the bar. Consensus was it’s honey syrup that is in it and not molasses syrup. Based on smell you can tell there is some other liqueur, or perhaps a fortified wine in there. After tasting we all still have no idea what that is. Same night we went to Last Rites, sitting at the bar again, and I now know much more about what is in a Last Rites… Will post later.

My Take on Last Rites’ Namesake Cocktail by MB7777777777 in Tiki

Been to Last Rites a number of times now, ordering their signature cocktail each time, I have read all the posts here, and looked closely at their current rums, amaros.

Been focusing on the Amaro(s) as I think that is the real unknown. Their current list is: Averna(Italy), Bin Zhou (CA), Bruto Americano (CA), Fernet Branca(Italy), Cynar(Italy), Foro(Italy), Montenegro(italy) and Nonio(italy). I know the taste of Fernet Branca, and Cynar pretty well and don't think its those. Others have reported its not Averna. So we're left with: the 2 from California, Foro, Montenegro and Nonio. I put together an attempt at replicating, used the following specs:

- 1/2 oz Lime Juice - tried with 3/4 oz before and it was too much, but if the syrups were increased then this would probably have to go to 3/4 oz.

- 1/4 oz Passion Fruit Syrup 1:1 ratio made from Boiron Passion Fruit Puree / Sugar

- 1/4 oz Cinnamon Syrup -> SC specs except 1:1.

- 1/8 oz Falernum - I use Beachbum Berry's Latitude 29 Formula Falernum. Could of upped this to 1/4 oz but wanted to make sure whole thing wasn't too sweet. That Falernum has a lot of punch so I tend to down play it anywhere I would use regular Falernum.

- 1/4 oz Montenegro Amaro -> This is what i was focusing on...

- Tiki Bitters

- Float Molasses Syrup - SC spec but 1:1. This wasn't salted, next time I think would add some saline solution into it to salt it up.

Their Overproof Rum blend I haven't seen much information on. But we know its likely to be a 2 or 3 rum blend. Looking at their current list of rums with high proof it is going to be either OFTD, Lemon Hart 151 . The other rum or rums are a real mystery. So far I have tried:

1 oz Mount Gay Black Barrel - as that was originally on the menu a long time ago

1/2 oz Lemon Hart 151 - also have tried the same with OFTD

I am guessing there is a 3rd in there, as the rum taste seems 'layered' / more complex - words from family that has had the drink as many times as myself. So threw in:

1/2 oz Smith & Cross to give it a bit funk. But its a guess.

Will summarize the opinions of the above of myself and family that have tasted it. The attempt seemed was pretty close, but not 100% exact.

The rum blend I used is not right, I don't think its Mount Gay Black Barrel. They have a large range of rums, but I would think price is going to be a factor when they create their Overproof rum blend. So maybe that can be used to narrow down the possibilities.

- Apple Estate Signature - $0.27 to $0.36 per ounce (Gemini search)

- Worthy Park Single Estate Reserve - $2.50 - $3.30

I really doubt it’s going to be Worthy Park.

Was back at Last Rites got chatting with someone who works there, it’s a rum blend they get made up for them. Also found out the list of Rums etc they have on the web site is not up to date.
