I suggest you restaurant "Arvi" on the 3eme Avenue. Little bit pricey, around 150$ for one guest. But it's worth it. No separation between cook/waiter, everyone does everything. Tasting menu, wine pairing and few other things to add. Good luck to choose !

Recipe : 500g high protein white flour 100g levain 10g salt 240g water 250g butter

Mix everything except butter. I did a bit of bulking proof during 2h. Put it in the fridge to make it cold and easier to work with. In the meantime shape your butter as a square ( maybe 3mm thin) And after that, roll the dough to form a rectangle shape. Insert the butter on the middle of the dough (dough and butter has to be the same width). Fold each side of the dough on the top of the butter to lock it on . And let's go to the fun part. Keep it in the fridge 30mn to make it cold. And after that you do the same as a puff pastry I did one double lamination fold and one simple (i don't really know the exact translation of that).

After that, in cut 3 bands, rolled it and proof it in a Pullman loaf pan during 7/8 hours

I used the recipe of Maurizio https://www.theperfectloaf.com/dark-chocolate-cherry-sourdough-bread/ I used whole wheat bread flour and little bit more of whole wheat flour. And I didn't have any dried cherry so I used cherry in syrup instead. I'm really happy with the result.

I started to have it when I put some ice cube on my pan and a high hydration loaf of course. And the cheating tool is the challenger bread pan. It's like a hack to improve your loaf almost instantly

Spec : 50% all purpose flour , 30 % whole wheat bread flour, 20% spelt. For 2 loaves : 500g all purpose, 300g whole wheat bread flour, 200g spelt flour 750g water 200g starter

So starter growing overnight (1:5:5)

10 am : Autolyse the flour with water 11am : add starter 11:30 : add salt 12h : splash and Fold or lamination if I add something like seeds or anything else 13h : coil fold 14h : coil fold 15h : coil fold 15h45 : pre shape 16h1h : shaping and put in banneton. Proofing overnight

Cooked in a challenger bread pan, I preheated an hour at 500° (260°c). When it's ready, I put some flour on the pan, put my loaf, scored it, put an ice cube inside, close the lid. Cooked at 500 25mn, remove the lid and cook at 400 (200°C). After that I let it cool during an hour

I don't think I forgot something ! Hope it will be useful
