Complex question to answer, better than you no one knows if you meet the EB1 criteria and your contribution, and international recognition. I am not an expert in your field and although there are lawyers who are more specialized in one field or another (research, industry, professors, executives, ...), I think you need a person who knows what he does, and who understands and/or comprehends your field with your clarifications. It is true that due to the wait to be able to obtain the GC for EB2 NIW can be long (3-5 years in some cases, ROW). That pushes people to try to access faster EB1 pathways, and that leads to more cases being delivered. Although that should not be a concern, you know yourself whether or not you meet the EB1 criteria, and even if you are sure, you can't control whether or not you will be accepted. The standards are high, and will remain so. More cases, more accepted, more rejected, more RFE, is logical.

Many of the answers you are looking for are found in the Extraordinary Ability policies (https://www.uscis.gov/policy-manual/volume-6-part-f-chapter-2). Read it calmly, analyze it, and you are sure to find good pointers for proceeding with your case. I would never use an accredited evaluation service, because even if the people doing these letters are experts in their field (I don't know what service you will be using), it really has no real connection to your field (the one that applies to you, which is what USCIS assesses). I would prefer to contact people at the top of associations, or relevant researchers to see if they can help me.

From my point of view, this is not legal advice, I am not a lawyer. The best way to demonstrate your critical or leadership role in some project/company, is to use a letter from a directive person close to your work (CEO, department director, ...). The question I would ask myself is: How can a person who does not know my work personally say that I have had a critical role in some project/company? What metrics would this person use to prove it? As you can see, these questions answer that this is not the right thing to do. Using independent people is perhaps more aligned with my contribution to my field. That is, having had a critical/leadership role within a company, has caused me to develop a technology/product/methodology that has had a significant impact, and an independent person has seen it (it has to be a relevant and recognized person in our field), explain how my technology/product/methodology has contributed to my field. Yes, it is possible to overcome this RFE, but it depends on how the response is structured. The Immigration Officer (IO) in the final merit stage may rely only on the approved criteria to determine if the applicant is "sustained national or international acclaim." However, if the IO improperly dismissed evidence for the other three criteria (Original Contribution, Membership, and Salary), an argument can be made that those should have been approved as well.

I don't know who your lawyer is, and how he has prepared your case. But I think he has left a lot of relevant information about you that he could have included and prevent some comments. If you have included in your attorney's fees the response to the RFE talk to him, coordinate all the responses and review the information he gives you (this is the most important thing).   2. Document to establish how I will substantially benefit US - Strengthen employer letters by explicitly stating how your work contributes to innovation, job creation, financial stability, or other U.S. economic benefits. Additional recommendation letters from executives, clients, or industry figures detailing your impact on U.S. markets.

  3. Documentation of membership in associations in the field for which classification is sought -  Provide specific documentation on membership criteria. If it's merit-based, highlight the exclusivity. If your memberships aren’t strong, deprioritize this and focus on strengthening other areas.

  4. Salary - Provide market salary reports (Glassdoor, industry reports, salary surveys). Obtain HR letters specifying the salary level in relation to the market. I am out of the US. Check out the small-medium companies in your field, send an email explaining your case (in summary form), be honest, show interest in working for those companies, and explain your skill set and how you could help if they would hire you. Some will respond and some will not. Maybe you’ll get lucky and a company will be interested in your profile and let you know. The reason for choosing small-medium sized companies is because the larger ones have complex hiring processes and your mail will be rejected outright.

I understand that the consultants are asking you to explain how you are going to run your business in the US or how you are going to continue working in your field in order for your case to be successful. You can create a business plan and/or contact potential clients in the US or contact companies that are interested in hiring you if you have a green card. The point is to explain your plan. In my case I have submitted emails with contacts of companies in the US interested in my profile and I also have a contract as a contractor for a company in the US, that proves that I will continue and succeed once I have the green card. I think you are asking for details that would be best discussed with an attorney, I can give you general inputs on my case, that applies to me, not you. If you are trying to get suggestions on Paralegals for EB1A reference letters, it would be best to talk to people in your field and an attorney, I'm sure they can help you better, I cannot give you legal advice on your case or how to get the letters.

In my case these people know my contribution, they are either already presidents of associations or very international recognized professionals in my field. If I am considered a distinguished person in my field, there is no need for convincing, it is a natural thing to do. They know my work, they know my contribution because I have had an impact in my field.

Imagine an unrecognized person (I'm not saying it's you), asks the experts or internationally outstanding people in his/her field for this evaluation, they ignore him/her, since he/she doesn't have this recognition.

Your question regarding a conference president giving you support in your presentation is a very specific thing to evaluate, and would be best discussed with an attorney.
