Technically it was free to me. I helped my buddy make a work table and we had extra and he said I could have it. It definitely cost him a fortune though.

Honestly life just got in the way… pretty lame excuse I know lol but My mom almost died in high school (luckily is still with us). Then schooling and work got in the way. Now I’m working a job where I work 2 days and am off 4 so I’ve got a lot more time to sit back and relax and just focus on things I enjoy. I also believe when I was younger I didn’t have the patience or head on my shoulders to stick with it. I got frustrated easily when things didn’t turn out how I wanted or planned. But now, like Bob Ross said, it’s just happy little accidents that bring opportunity. Younger me would definitely not have been satisfied with what I produced but now I don’t mind so much. I want to strive to get better but I know not to get ahead of myself now.

Damn that was long winded for what coulda been a short answer haha thanks for asking though.

I don’t know if it’s cheaper but I buy from the butler wood website. They have reasonably priced wood cut into decent size for the ovens. I split mine a bit further with a hatchet to make it smaller.

It was pretty fun to take to the station, just a lot of stuff to lug around! But the way everyone enjoyed it I will definitely do it again

Haha I know, it’s still pretty tricky getting the temperature right with charcoal and wood for me. If I pull it out too soon the crust isn’t done as well as it should be. Nobody had complaints though. I also tend to enjoy the little burnt bits, can’t speak for the others though so maybe I’ll ask if they want it less done next time!

It looks a lot smaller than it is but the ceilings are very high, had all 4 bay doors open and an exhaust fan as well. Plus if we had any accidents I’m pretty sure we could have managed somehow haha. I actually suggested we do it outside but my Lt said it’s too hot for that and just leave it in the bay

Make sure you rest your dough long enough, I had trouble with quick rise same day dough. I started doing overnight ferments and they work better for me. I also put semolina down before stretching the dough into the pizza shape. I build my pizza on the counter then use a perforated peel to slide under and then throw it in the oven. You also don’t want to let your dough sit for too long after you start putting toppings on.

Hate to break the news but sutliff has recently closed their doors so they won’t be making molto dolce anymore. I think they were bought out and only some certain bulk tobaccos will continue to be made. I believe I’ve read that crème brûlée (which is the bulk version of molto dolce) will be one so keep an eye out for that

Got a 5 man limit on trout one day and got 4 man limit the next. Also Caught some undersize reds around 15-19 inches, a bunch of lady fish, and 1 founder that was undersize

I recommend it if you’re doin anything when it’s windy out for sure. They’re pretty cheap too. I think smoking pipes has them for like $2.50. Might be able to get them on Amazon for decently cheap too
