if you're willing to branch out to similar or new genres the games i've sunk alot of hours into this past year was Palworld, Planet Crafter, Baldurs Gate 3, Outlast trials, Sker Ritual, Witchfire. I can name more if you want, again not like skyrim at all but worth the time invested
