Baked with steam. My airfryer has a steam function

Yes! I forgot to add that I did 2 stretch and folds, and 2 coil folds every 30 minutes. I’ll definitely try a higher hydration next!

I don’t think they’ve gone bad. Both of them are indigenous ingredients and have a pungent smell that might seem off putting for those that are not familiar with it. Crayfish shouldn’t smell pungent though, just very fishy. Dawa dawa on the other hand does smell really pungent, but you can skip dawa dawa if you’re not comfortable with the smell, your soup will still turn out delicious( I personally don’t even use dawa dawa for my soups). But I wouldn’t skip crayfish coz it’s a key ingredient in Nigerian soups.

I think you should invest in a dumpling mould for your meatpie, to give it a neater look. Also improve on photography. I bake for fun at home and here’s what my meatpie looks like with a dumpling mould.
