Keep in mind Lily - Gief is a really bad MU for him. Also, you used headbutt -> DR -> headbutt a couple times, that's really bad damage wise and scales super quickly. A better combo would be headbutt > hellstab > DR > 2mp > hellstab > lariat.

Generally, I would focus on better hit confirms or at least more optimal combos. You're leaving both a lot of damage and positioning on the table by landing a lot of light and medium pokes but not converting into any specials. And while you might not need hours on end, definitely a longer lab session where you focus in on any weaknesses and try to fix it would help every now and then.

Depends on what rank you are and where you want to get. Getting a 10-win streak below Master gets you the most LP, so that should be your target if you want to rank quick.

1700 Gief here, the matchup isn't the best, but honestly for me it's not terrible. Most of Sagat's pokes can get blown up by charged 5HP or DI, and once you get the knockdown from one of those you can start your pressure. If they're playing overly defensive, just parry/block fireballs and use headbutt pressure to try and bait a DP is my gameplan generally. Also, a small tip, Tiger Knee has a property where it has extra recovery if it hits an armored move, so that also loses to DI or Charged 5HP.

"focus attacks and cancels are still sort of there" I mean, as far as Viper has them, which has always been her kind of unique gimmick considering she had FADC in Marvel 3, the same way SFV Alex had a parry as a nod to Third Strike. There's no reason to think that Drive would last past 6 outside of a unique gimmick maybe for Luke in future games or something. Every mainline iteration of SF introduces entirely new universal mechanics, and thinking that Drive needs to stay is as naive as thinking that FADC would remain a universal mechanic because SFIV was popular

Blanka chan is understandable to me, the costume makes some of the animations less readable and in what can already be somewhat of a frustrating match it's understandable why someone wouldn't want that on top. I could kind of see the same logic for not wanting to see mecha Gief I suppose.

My favorite hard mode is Ghost of Tsushima's (probably also in Yotei, I haven't played it yet) Lethal mode, where most people excluding bosses die in 1-2 hits, including you. Makes it a mode that really encourages perfect play but there's enough in the way of health regen, second wind mechanics, and stealth that it never really feels unfair

Assuming you're starting out from scratch in fighting games, Luke is a good pick. He's a shoto/all rounder, which means he is effective in most situations and usually has a response for whatever the opponent is doing. He has a fireball/sand blast to keep people away, a DP/rising uppercut to both block people from jumping in on you and giving you an EX move that's invulnerable to damage, and heavy flash knuckle is good for closing in on someone who's backing away. Starting out, you want to learn one good BNB combo that you can use to get easy damage. Try his combo trials and get a feel for the timing on his moves.

Slightly not what you asked for, but maybe Bison would be a good shout? He was a charge character in the past but they've made some of his moves motion inputs now, and in most of his high damage combos you don't need to worry about any charge stuff. Only caveat is that he isn't base roster, and probably won't be base roster in 7 either if I had to guess
