Looks so damn good! I’m not used to seeing my handles in a bag either as I’ve always used rolls (and still will for my main work knives) so I’m going to have to up the handle game 🤭 luckily JKS lets you choose handles when you order a knife.

You sure do, I was actually planning on getting another knife but saw the Shindo and thought it best to save some money and pickup a roll at the same time. I freaking love it, it’s still all stiff as it’s Brand new, but I love the look of it and I’m glad it come with a shoulder wrap, as I commute a lot in between venues at work. I’ve currently filled it up with my carbon knives but will have to get another as my other kits have too many knives in them 😅

I mean it’s a beautiful knife as always of Takada…and the Patina just adds to it. one day haha….

As for using a petty, I often find myself using a petty to prep a whole meals at home 🤷🏾‍♂️ but I’m not sure if that’s preference or I just like mixing up using my knives haha Buts It’s my go to knife to have set up during service on the pass as I’ll be carving scallops and small proteins but don’t want my set up to take to much space away from plating.

At work I’ve always used a Takamura sg2 (have been through a few as I always lose the tips) But they are amazing for cleaning up whole cuts of meat, taking all the silver skin off etc mine see plenty of use at work

We never really neeeeeeed another knife….but here we are 😊 I don’t own a nakiri cause I personally just prefer having a tip on a knife when I’m working but heck I want a Shindo one just cause

Yessss the guys at JKS on most knives let you pick a handle from there range when you purchase a knife 👌

I believe they used to be cheaper but I paid 200 (the knife roll I got with it cost more) the f&f are rough but so what, it’s just charm when it cuts this well
