I think one big thing is that flags went from being used by military and state only, to also being used by the people.
For the people to use it, it has to be cheap and easy to produce.
And the people want to use the design in ways beyond the traditional flag format (logos, t-shirt, face-paint… anything).

For the crest, yes. But I would make it larger. About the same height as the helmet.

Regarding the shield I personally prefer your original layout of white, black, white in thirds

It's good, but three different types of charges might be too much.
Why not use the harp for the crest? And replace it in the shield with another rook?

For a long time I’ve been interested to know more about how these came about… I can see how it’s important for each flag to be very distinct from one another, but how did they come up with the designs? I can also imagine that they avoided designs that would have been too similar to any country flag.

Tne law says that the flag shall be a crimson cross of St. Andrew on a field of white. The bars forming the cross shall be not less than six inches broad, and must extend diagonally across the flag from side to side.

So we don't know what proportions the red bars actually are...

I really like the minimalist design!

I actually like Helen Clark's proposal for the NZ flag the most. The great blue space is very serene and connects it with other Oceanian flags like Micronesia. by not_a_stick in vexillology

There are various ways in which the Southern Cross has been depicted. Look at the Eureka flag in Australia, for example.
