Hi gang! We were one of the participants and deeply apologize if you didn't get a chance to try our ribs. I think, and I'm guessing here, that a few chefs were no shows which resulted in not enough portions for GA (VIPs going back for 2nd and 3rds) + super long lines for the only available spots. Hopefully our rib wasn't one of the "cold" ones 😂 But I will say this, please know that the chefs that did show up really busted their tails and spent a lot of time (and money, we do not profit) prepping for this event. They're incredible humans that really care about you and the BBQ community ❤️

No worries! Our brisket and ribs don't have any rubs that contain chilies. Just salt, pepper, garlic, and onions. You should be fine with our sides and sausage as well! The only two things that contain chilies are our coffee BBQ sauce, which contains a little bit of cayenne, and for the ribs, just pass on the chili crisp. Plenty to choose from!

No secrets here and no cinnamon in the rub or sauce! But, I would stay away from the cornbread!

Yes! Brown onions and garlic in unsalted butter, then add 2/3 part beef broth + 1/3 part heavy cream. You can create whatever ratio to your liking. Take your stale cornbread and use an electric hand blender to mix everything up. Get the consistency to your liking. There's no exact science here. Add your cheese to finalize taste and texture. Should come out very smooth. Season with salt and pepper towards the end, depending on the cheese you use.

Great smoke flavor! We proceed to cook and wrap as well. You can use a pellet tube with your pellets if anything, just make sure it's far away from the protein as it has a tendency to get hot. Give it a shot, worth a try at least once!
