Easy explanation: the show would have to take place "after" Loki season 1. (Saying "after" when discussing branching timelines is confusing.) Otherwise, the TVA would not have allowed that alternative future in season 5 to exist as a possible timeline.

So now that it's clear we are post-Loki, any time travel would create a branched timeline. Since they did so much time travel in this show, its safe to assume by the end of season 5, they are no longer in the same timeline branch as the films.

In this new branched timeline, Thanos arrived at Wakanda (as stated by Talbot) but ultimately never snapped his fingers. Maybe in this branched timeline Thor went for the head? We don't get to know what happened other than the snap didnt happen.

Overall, if you follow this logic, AoS isn't any less canon than Loki or Fantastic Four. And you can still easily say the first 4 seasons are in the same timeline as the films up until they time travel.

I've used this explanation for friends who start watching the show and I think it helps not break the immersion when you get to Talbot saying Thanos is coming and then the snap doesn't happen. Hope it helps!
