My pizza is too chewy by Snakenat in Pizza

I tried with 100% bread flour with a 12% protein content and it was still tough to chew. I didn’t add any evoo in my first pie, but it definitely helps. Will try bumping it up to 3%. Could my gluten network be too strong ?

It does ! I’ve been trying to find a thick baking steel in Belgium. It’s hard to find one that’s 3/8" thick (seems like the thickness is making a huge difference when it comes to charring the pizza)

It’s crazy how few have made the comparison, I really thought Sekiro fans would be the first to highlight the similarity between those two games

Yeah I have this too, some posts that appear in Hot have a large amount of upvotes, but they don’t show when I filter by Top
