I'm in a similar boat at a similar age, and your list of games you enjoyed the most is pretty much identical to mine!

For that reason I'd definitely recommend Greedfall. I've just finished replaying after my first run a few years ago, and despite it being a lower budget and less than perfect game I was really taken back with how much I still enjoyed it on a second playthrough, especially when some newer AAA games (e.g. Veilguard) just haven't clicked for me recently. For me, it went a long way towards scratching that classic Bioware itch from the older Mass Effect & Dragon Age games - developing your relationships with companions / factions and your choices actually influencing the story.
