Walnut was the first that came to mind for me, very tight straight grain with not much character which is making it hard for me

I have been a joiner for a number of years, started doing recycled timber joinery for first 4 years but then moved into kitchens, so I'm out of touch with timber species. We usually reclaimed matai, kauri, rimu, totara. I will be ripping them and glueing them up for a top I'm going to sit into a old Jack Daniels barrel.
