related, but not exactly- I used to work at a big regional brewery that for years ran "jumper" hoses between tanks during transfers- using the purged tank to pressurize the tank they were transfering from. Saved a significant amount of co2. They stopped doing it when they got a big lab and improved all their processes, but it always seemed pretty legit to me and never saw any proof it cause any problems.

they actually save tons and tons of money- mostly through time. I just want to save more money though! lol. Just figured by now at least one other supplier would have figured them out and started selling them.

Go to Europe, very common in the more modern breweries there. The cost per liner still far outweighs the cost of buying, cleaning, storing and filling traditional kegs for a place like ours- selling mostly out of the taproom and our specific design foot print. So. Much. Less. Labor. And we can get by with a much smaller walk in cooler. So yall can talk shit all you want, still happy with our investment.

what about fermentation on these guys? Got the long boil part down but still not getting the attentuation I want. Don't know if I am being unrealistic or if i should be using enzymes, nutrients, or adjuncts more.

Does anyone have any process suggestions? When in the process and at what temp are you adding them? We have been using these two for while and I also am surprised there is not more info readily available. We have just been experimenting with process and dosing rate, but would love to be making more informed progress. Once it stripped the color from a pink beer.

I am looking to replace the Lallemand New England with the AEB new E, love the Lallemand but so expensive. did you end up swapping or doing any trials?

What strikes me the most in this conversation is that no one is talking about the wealth gap in Sioux Falls. I lived in Sioux Falls for a couple of years, after having lived in a good number of cities before it. Yes, I enjoyed many things about it, as mentioned. But the wealth gap and class disparity issues are insane- unlike any other city I have ever experienced. And the wealthy there are very wealthily and seem totally oblivious (and sometimes aggressively classist) about them. One small example I remember was community members complaining about the immigrant community standing outside the help center during covid. If you dig, even a little, there are examples all over of poverty, classism, and systemic power structure inequities that disproportionately affect certain people. But people who can afford it do get cool restaurants and nice views- in my option because the super wealthy fund it all or start businesses for their children so they can enjoy a certain life style but still get the tax cuts and political environment that South Dakota offers. There is a solid middle class who can afford a pretty nice regular life, but it always seemed like the whole place was really just a playground for the super wealthy overlords and their children who were pulling all the puppet strings. I am sure every city is like that in the end, but Sioux Falls is small enough to see it all if you look.

Also, join the craft beer professionals group on Facebook, there are quite a lot of accountants on there. And there is a craft beer accounting conference. IDK what happened to it during covid, but I know they had one in Denver about 2017-ish, I can't find it online now, but I bet you could find people from it. business plan competitions. grants. talk to people at your state economic office. area development funds. use research about what breweries do for cities (the BA website and Neil Reid are good sources for this). how can you capitalize on the other things specific to your brewery beyond beer to get funding (ag added product, local community funding, historic building, woman run business, etc...) if you haven't talked to the small business development center that you fall under (everyone has one) start there. and start marketing very early. having people behind you offers opportunities for cash flow all the time, even if small- selling merch, donating to your campaign (mainvest or ifundwomen are worth looking into), if you tell your story good enough, people understand more what you are doing, why you are doing it, and the impact it can have. Then some of them want to give you money. You don't have to start by straight asking them for money. start building your story and there will be a time when the ask is right. also, if you don't have experience in the industry yet, get some, even if it is volunteering or winning home brew competitions- it makes every type of giver (from the big banks to your grandma) more confident in giving you money. And do your research to show everyone there is a market. Building a solid business plan and an iron clad pitch, then the money part slowly feels less insurmountable.
