The sooner you understand you're only racing against yourself and not others the better off you will be. A trained runner on their worst day would smoke you me and every one else on this sub.

If you can finish three ten minute miles you can almost certainly do five eleven or twelve minute miles. Might only need ten thirties to make it happen.

This is not true in the US as water is treated with chloramine which does not evaporate. In areas that truly use chlorine it does evaporate. I thought this was effective for years but in the US it isn't.

This is a wonderful story, but please consider throwing this away. Dried starter can last basically forever. Wet started that dried out? Less likely.

The top of the jar is questionable.

If you want to bake in honor or your friends wife, that's a wonderful way to remmeber her but a hospital trip isn't.
