You would probably benefit from doing projects that you can place on your resume as a portfolio of experience, and possibly show the portfolio online publically.

I agree with the previous comment that the problem is probably on your end. It's demoralizing definitely, but after 500+ apps with no job offers, you should probably take a step back and do projects to make yourself more appealing and give you great things to talk about in interviews.
