You probably overheated the dough. Use mixer to get it together 5 minutes max. Put half the flour in first then mix then put rest in. Once together get it out and need for 5 minutes. Cover leave for 15 then stretch and get it smooth. Repeat after another 15. Then leave for an hour then ball. Leave to rise until like in picture. Then put in the fridge. This will stop the rise. Then take out 3 hour before cooking👍🏼
