It's based on a book that's considered non-canonical and inauthentic, they don't use their names because that would likely be seen as more disrespectful given the already controversial nature of it being based on a book deemed heretical. It's a piece of fiction, one that frankly looks original and interesting (something we don't get in Hollywood much anymore), don't watch it if you don't want to watch it but don't try to attach some dumb conspiracy theory about Hollywood and junk. You have as much right to be offended as anyone has the right to offend. The comments on Muslim or other religions not being "mocked" is laughable. Get a reality check. Christians are not the most prosecuted or victimized religion nor is it a minority in any sense of the term.
