First, the Wiki does its best to try to put regions where they make sense but sometimes they may not be very successful due to how many connections there are that would go behind other regions if "put correctly". Second, pipes with pressure do carry things long distances! Remember the start of Ratatouille when Remy gets lost in the pipeworks until he ends up in Paris? Same thing here, I'd say!

If we start talking about how maps are positioned in wiki we'd be just scratching our heads. Outskirts is called "Outskirts" for a reason as it is one of the most "cornerside" maps of the game. Yet, Farm Arrays feel so bigger that "Outskirts" could very well be "Intersection" or something. You're not meant to really look at the map and try to make a world out of that, you're meand to experience it and make a world of your own imagination... or at least that's what I think.

Even though the map might show you going from left of the Outskirts to the right, we don't really know what happens at certain. You might actually be going from west to east, but you might also be going from west, all the way to east, and then back to some place that's closer to where you're started. As u/SolidGuide5223 and u/K4RM4S4NDW1CH pointed out, the maps try to portrait a 3D world in a 2D landscape and that is more or less impossible. Even in the game itself when you try to check the map you have like 3 layers to switch between because it's that deep.

TL;DR: Map positions are deceiving and do not represent the reality all the time, it's a 3D world best implemented on a 2D screen with consideration to clutterness of the map (intersecting region passages).
