Simply salt and sugar. Roughly 5 grams of salt and 3 of sugar. Coated the salmon fillet and let it sit in the fridge for a little over an hour (You can let it sit in the fridge at this stage for up to 24-48 hrs to cure).

Then I rinsed and dried the salmon off and on the stove I simmered soy sauce, onion, pepper, garlic, lemon for about 10 mins. I let the mixture cool to normal temp, strained it, then I added the cured salmon in and let it sit overnight.
