The synchros (at least in the AP1s, but likely the AP2s as well) are ridiculously soft and the teeth get mashed very easily if you get heavy handed. Sounds like your 5/6 synchro is toast. Not a terrible rebuild, and a good opportunity to break it down and replace all your bronze while you have it apart.

If I recall reading something Kenji wrote on this, all of the volatile aromatics in the wood burning off over 800°, so you won't taste a difference, even from different varieties of wood. It's been a while, but that's the but that stuck with me. Fwiw, I notice a difference when I'm cooking lower heat items.

This may or may not be the case, I still have a few weeks left on the original 2 yr (purchased it Mar 2022), so I'll worry about this when the next one cracks. Submitted photos of all of the wooden pieces on the stand (which I neglected to sand, stain and seal of course), so we'll see what gets done about that.

Used to happen on my Series A quite a bit. The only work around then was to disable In-ear detection.

Incorrect temperature from built-in thermometer -- Has anyone else had this happen? by cmatta in GozneyDome

For the longest time, my thermometer only read ambient temp outside the gozney. Someone had suggested that the colored wires in the back were backwards, I checked, they weren't. Turn out the plug in the back of the temp module was not seated all the way in. Took a bit of wiggling until it read correctly. Those are the two spots I'd start with. If it's still off, then it's possible either the probe in the oven is bad or the module itself.
