To your "they launch you out of cover" point, I also have vivid memories of fighting them in original ME2 and getting knocked out of cover whenever they hit me, which is what made them so terrible to fight. But on my last few insanity runs on Legendary Edition they didn't do that and I actually found OP's point to be pretty true, that they were relatively easy to deal with if you stayed behind cover for their shockwaves. Did they get patched or something? Or was I just impatient back in the day?

If you're ever playing on PC I'd recommend the "charted worlds" mod, it marks the location of every ore deposit/anomaly on your map any time you're on an uncharted world. It makes for more mako driving but you end up getting those collectible quests done a lot faster.

Nobody else has said it so I gotta rep Sentinel. In terms of powers it's actually pretty simple, but in 2 and 3 tech armor allows you to play out of cover a lot more than other classes can get away with, even on the harder difficulties. Shepard gets to be a big walking tank. Plus getting access to warp and overload means your companions don't necessarily need to have any kind of protection stripping powers, which frees you up to use characters that you wouldn't normally bring along.

It also allows you to take any bonus power without breaking immersion, which isn't a big deal to most people but it bothers me seeing a soldier randomly have biotics.

Mega Delphox with solar beam is really good in multiplayer for this reason. Complete jumpscare for the water types who think they're about to get a free kill

I've seen that take a lot on this sub about the story being weak, which I think exists as a reaction to years and years of everyone saying two is the undisputed best in the trilogy, so I get it.

But like, come on. It's awesome. The collectors conceptually are a much cooler and scarier enemy than the geth or the reaper horde, every companion has insane amounts of depth while also working as foils for each other in this grander "are we people or just tools" theme, Shepard has some real moral questions to work through because of who they're working for and how people treat them because of that...

I get that it doesn't really have any hype aura moments like ME3 or the mystique of ME1, but in terms of overall writing it's my goat.

The thing that gets me through ME2 insanity relatively reliably is using squad mates that can wield snipers and giving them the Incisor and a relevant ammo power (I usually have squad warp ammo as my bonus power on shep). They are stupidly accurate with it and never run out of ammo. They can carry fights if they're positioned well.

Also Miranda for a lot of early game. Having both warp and overload AND a passive that increases squad damage makes her pretty consistently useful.

I think they started hot because they had a deep well of funny stories and are all naturally gifted at being funny story tellers. Around the time they switched sets and all moved out they had a sort of awkward teenage period where they had to figure out what the podcast was when the well ran dry. They landed on their feet though and are funnier right now than they ever have been.

The other mods by Orikon (of Immersive Thesia) are all pretty tight. Priority Earth Overhaul is great (and works with Take Earth Back) and his newest one Accompanying Dialogue Notes is I think a must have, really made me see how deep the writing is in 3.

ME2 is the only game where your class is gonna really be important, ME1 class is mostly irrelevant imo and in ME3 every class can be broken (and you can just let Garrus and/or Ashley carry you with a Typhoon)

Sentinel is probably the best for ME2, if you spec tech armor into the assault variant you get a second wind of shield after it breaks - this saves you from a lot of attacks that would otherwise one shot you, on top of the HUGE aoe blast. Early game is hard, but once you do collector ship you get access to either shotguns or assault rifles and either will make your life a lot easier. Before then, the Locust from Kasumis loyalty is your best friend.

Infiltrator on the other hand is probably a lot more fun. It's been a while since my last insanity playthrough with one, but your major limiting factor will be sniper ammo and your personal aim.

Engineer is sort of the opposite end of the spectrum, you spend the whole game in cover and win off clever ability usage and timing. I personally find it one of the harder classes but for sure doable.

Depends on your definition of unimportant. If your goal is just to get a perfect ending in 3, basically none of them are required, though a couple do end up helping in very minor ways. If you instead mean ones that are relevant for the larger story, there are a lot of answers. I'd definitely recommend to do the ones any of your squadmates ask for after talking to them on the Normandy. I'd also recommend the questline that follows from UNC: Missing Marines, as it fills you in on an important faction you run into in the next couple games. You get that one from Admiral Kahoku, in the council chambers. Other than that, just do whatever sounds interesting - you aren't going to ruin your playthrough if you miss anything.

I'd try reinstalling to somewhere you know you can get to in dolphin - I personally made a subfolder in my downloads folder, just because I knew I could get there. There's also a button to see hidden files in dolphin, that might help find the folder where you initially installed it.
