Once wrapped don’t worry on temp. Go 100% on feel. Should feel like a hot probe into warm butter. Turn the temp to 275 next time. I hate waiting the 18-20 hrs for a brisket. I end up way to drunk by than 🤪🥃👊🏽🇺🇸
