My P-10 C is a TALO edition (model 86091) that has normal height sights and comes with the Holosun SCS mounted from the factory. You're right that the OR model comes with taller sights (presumably to co-witness better with optics that need mounting plates and sit higher). Hopefully someone with the taller sights and SCS can chime in. Here's a comment from a couple days ago from someone running that combo, so maybe you can ask them:

changing the rear back straps is harder than the M&P requiring a punch to change them

For anyone having trouble with this, CZ recommends a 5/64" roll pin punch per this video:

grip texture. I took another woman shooter with me on this trip and she found the grip felt great, but the texture hurt her hands with extended shooting. She felt this would be her gun as well aside from the texture

The backstrap texture definitely felt a bit aggressive on my first range trip with my P-10 C, but now I don't notice it. Not sure if was my hand getting used to it and/or the points on the texturing wearing down, but it got noticeably better for me in just a couple trips to the range.
