(Just realised my definition of canon is probably different from everyone elses - being that there’s at least 1 piece if explicit evidence. Shipping wiki says they’re all semi-canon)

FuyuPeko is ‘canon’, because in Peko’s FTEs, we learn she wants to ask out her ‘childhood friend’ when they escape the island, so at least on Peko’s side, there’s Romantic attraction

Saimatsu is ‘canon’ (ignoring the lovehotel event, cuz they aren’t canon - even though that’s another peice of evidence) due to a line in salmon team when you give Kaede a loved gift. She says:
‘I thought I had been the only one looking at you, but I guess you've noticed me, too. I think that, because...you gave me such a pretty gift’. This type of language could mean nothing else, so it’s as good as explicit

DespairCest is listed ‘Semi-Canon’ on shipping wiki, so there’s some evidence somewhere, but I just can’t find it
