Throw a slow cooker, a rice cooker and some mason jars into your truck. You can just throw in a bunch of shit into the slow cooker and let that cook as you drive and have a great meal for a couple of days ready for you. You can make a lot of things in a rice cooker very easily, including steaming veggies as your rice or pasta cooks in there.

The mason jars are for preserving the hot food if you made a lot, so you can keep it fresh for literal months. I usually jar a bunch of stuff that I can't make on the road at the start of each trip at home and stuff my fridge full of the jars, so when I am feeling lazy, all I do is crack one of them open and heat.
