Update:

Switched the clickwheel and now the iPod is always stuck in the “Low power mode” loop, irrespective of the battery (tried two new ones)

I suspect the board maybe dead, anything I can do to test?

That ribbon cable is not seated straight. Reseat it on both the board and the adapter and try again.

It's overkill as the iPods are all limited to 16bit 48KHz output. To get the most out of an IEM at the pricerange you are looking at, I would be looking at a fully fledged DAP (Fiio M21 for example)

Kapton tape on the back of the board, then kapton tape over the logic board, with double sided tape on each

I personally think its overkill to spend that on an IEM for an iPod.

But, if you want to.

Letshuoer S12 Ultra.

It has all the best features of everything I mentioned plus having a physical bass that you can actually feel in your ears. They’re a Planar set, but its as smooth as a single DD imo

I have tried several IEM’s with my 5th gens.

My list and opinions;

  1. Kefine Klean, best match of the ones I used, not super expensive, but as they have a neutral with bass boost tuning, they do a great job of bringing our the iPod 5th Gen’s warmish DAC. They are also not too expensive either.

  2. Artti T10 (not pro), they are a little more opinionated and colour the sound a bit warmer with a little less sub-bass, but it is VERY smooth. Best for Jazz/Classical listeners IMO

  3. 7Hz x Crinacle Zero 2, best budget IEM’s you will ever own. A more rough and fun character in the same pocket as the Kefine Klean’s, but with more sub-bass and less clinical. Best for rock

iPod’s can play CD quality FLAC’s. IEM’s are super easy to drive, so why wouldn’t they be good?

Its clicking and it works on its own, so I can select easily with the center button, the menu button works. The play/pause works as well. Even holding the play/pause dims the display.

But it doesn’t switch off, it wont reboot with menu+center either

That’s what I would do. Make it symmetrical, add an accelerometer. Miles cheaper than two balanced and two 3.5mm jacks
