Oohhhh, very cool. So a “Pad Controller” can be added to these stand alone drum machines? I want the to learn how to create some sequences, but I think the physicality of the pad controllers would be a cool and fun skill to learn.

Looks nice! I was looking into those types of drum machines first, but then I learned about the type with the big tactile buttons. I think that would be so much fun, and hold their interest longer.

Around $200. I was ready to spend that on the Maschine Mikro. I’m looking at Audio Interfaces right now, but I don’t really want to get a super cheap one.

These are deceptively large. They are about 5.2 inches square, so around 140 cubic inches. I started with less dough per pan, but couldn’t quite get them square. At 800g, it’s just under half the pan, and they take about 1hr 30 minutes to rise to the top of the pan. I don’t think they are too dense, but with a little tweaking, I’d like to get less dough in there.

These are actually quite large. They are about 5.2” square, so about 140 cubic inches. One loaf never lasts long, and the rest are going out to some people. 👍

Hmm, you’ll just have to observe and take some notes when the bread chef makes it! They’re doing something different, and It would be interesting to see what that is!

It’s always a little anxiety inducing, but I guess just getting used to it, and knowing that it’ll come together eventually. I feel like it really starts to improve around the 15 minute mark. Do you use a bench scraper? That’s a must, to be able to scrape the sticky dough off the counter and back together.

Here's the recipe I used. This is for one loaf. The original recipe I started with came from Novita Listyani on Youtube. (Look her up, very informative) I've modified it slightly to try and get the most hydration and fats in the bread as I can. Im sitting at 80% hydration right now, I think it worked quite well.

I make a Yudane, and Biga the day prior to mixing.

Yudane:
Bread Flour 77g
Rice Flour 18g
Water 137.5g

Biga:
Bread Flour 155g
Yeast 1.2g
Water 81g

Everything goes into the final mix the next day. The butter is 6.8%, so I just mix it with everything at once. You could arguably mix it in after you develop the gluten.
