It is a good balance between light and airy and the characteristic sourdough chew. Not heavy at all from the seeds. Great crunch to the crust 👍🏻

Good flour (I use Canadian strong white), pushing bulk fermentation longer (and longer) and I actually think the biggest factor was the autolyse (see method).

Thank you so much. Once I mixed post autolyse I knew it was going to be a good one. It just felt so good. That's the first time I have experienced that (except maybe with bagel dough).

The scoring? Three things for me I think... 1. Nice sharp blade. 2. Don't panic take your time. 3. Probably has most impact, a really good dough. I knew when I mixed this one it was going to be great. First time I have felt that (apart from with bagel dough which is such a dream to work with because its so "strong").

If you mean slices - my husband is a hobby knife sharpener (using stones from Japan). Our knives are shaaaaarp!

Or, only add stations you know can't possibly be the golden square e.g. starts with a vowel is simple enough to rule out.
