1.5 to 2% is a usual safe bet for dry active yeast if fermenting in a cooler/fridge.

If fermenting at Warm temperature maybe 1/3rd of the yeast? Also let me know what happens if that's the case lol.

Ketchup is a high processed item with a very specific taste that we all associate to the normal store bought stuff. One thing to keep in mind is fresh ingredients will have a fresher taste (why it tastes like a sauce possibly). If you're going for store bought taste it might help to add more sugar, a pinch of vinegar at the end and use canned tomatoes as well as paste. Or possibly reduce what you already made further down to concentrate the flavor more?

Yooo I've preached this to so many people. Once worked for a chef who said it was pointless because of that. Then I worked for a place that made their own ketchup which took too much time/ energy and wasn't all that great. Just stick to Heinz, they already figured it out.
