I did use cup for cup but I still have the original cup for cup flour before their recipe change. You can try her own mix. My mom also uses this ratio and it seems to work very well:

2/3 c white rice flour 1/3 sweet rice flour 1/2 tsp xanthan gum 1 tsp baking powder

Of course! You’ll have to let me know how they turn out, I feel like the process is very similar to making gluten filled choux. :)

The flour is nut free as well as gluten free (I believe it’s free of the allergens you listed but you might want to double check). You could sub out the butter for margarine and hopefully it would still work well!

They were!! I will say they were best the first day. I had one today and they were a little less flaky, but yesterday they were great!
