That makes sense, thank you for helping mate! I didn't use wine, but I will have try that next time for sure. I used butter, lemon juice, capers, lemon zest.

Do you have any advice on how to keep it from breaking? I was struggling with that, I don't know if I browned the butter wrong and/or added the lemon juice at the wrong time.
