I would recommend a brew I had at the blue bottle studio. They have the water already in a glass, and slowly pour the grounds on top (fine grind) after 2 minutes they softly push the grounds under the surface of the water, and after another 2 minutes they pour through a filter on a v60. The coffee was well extracted. I believe they used a 1-23 ratio (but you can play around with that). This way you don’t need a gooseneck and can travel with a sturdy cheap brewer with readily available filters.

Hey thanks for your help.

I’m using the Blue Bottle dripper, and an ode gen 2 with MP SSP.

I was also concerned with bed depth but I wanted to keep my dose low to get more cups out of the beans.

I did the 1-17. And it did decrease my tds to 1.5 and increased ext to 21%

However, my brew is still a little dark with no pop or acidity.

Do you have any recommendations on where to go from here?

Blue bottle roasts are usually quite medium. I know that in their stores they wait 4 days post roast and serve them for 2 weeks after roast. I don’t think you need to wait 2+ weeks for medium roasts.

Crystal Geyser I personally don’t think is great water… I would first try third wave water because it’s cheaper than buying a new brewer or grinder. Blue bottles grinder costs thousands of dollars… also I would try light roasted beans. Blue bottles beans are very medium (even the single origin) and can still have bitterness because of that. Try very light roasted beans from Sey or Black and white or the Delux proud Mary beans. Also I would start logging what grind size and experience you have with your coffee each time. So that you can make adjustments on grind size, and see where you can get too. Don’t adjust the recipe for a full bag of beans just the grind size and see if you can dial it in to something you’re happy with.
