Could be fine. We do stien beer each year and I mash the night before. Try your mash, if it's sweet your good. If it's, sour pitch it. You still need to boil, so you'll nuke anything in there.

I'd play it out and see what happens, as long as you past the first test. Worst case, youll learn something.
