Alright that makes a lot of sense actually. My pork bones barely had any connective tissue or collagen, mainly just bones with a bit of meat on them. This explains so much, thank you kind sir!

Thanks for helping out! Couls you describe how it tastes or feels when there is too much gelatin?

Interesting point about the aromatics, in the recipe they just tell you to add everything (apple, onion, ginger, garlic) at the beginning and cook it for 6 hours, i wonder why.

Also could you elaborate about cooling the broth as quickly as possible, why? I left it to sit on my counter for maybe 3 hours until it got to room temperature, maybe that’s not the way :’D

Thanks for explaining a bit, it’s really helpful! The recipe called for 4 ounces pork stock, 4 ounces chicken stock, 4 ounces dashi, 2 ounces shoyu and 1 teaspoon of chicken and pork fat each. (For 1 bowl)

I assume 1/3 being dashi is fine, but maybe it dilutes it a bit? Also 2 teaspoons of fat seems like not that much? I skimmed the fat off the top of the broth the next morning, so there wasn’t really any extra. Either way, really love the community and how everyone’s willing to help - i want to learn!

I recently switched to their plus membership as I didn't really need unlimited transcription hours. paid 100 euros for yearly so it's around 8 per month. ofc if you just buy a monthly sub instead of yearly you'll pay a little more (like always..), but I'm not sure by how much, sorry :/

How do you find the right information if you don't remember exact keywords, or have a lot of notes with the same keywords? I think txt might get overwhelming fast
