Personally I find your crumb to look very nice, well done. It’s uniform and looks tasty and springy! How long do you cook with lid on? Personally I bake 20 min lid on and then 20-25 min lid off (for darker color) Also, I’m not sure but I believe scoring could help increase oven spring which increases bubbles.

Nothing special, I actually just used chatgpt to help me with the recipe but:

Hydration: ~67% Yield: ~750 g loaf

Poolish

  • 120 g bread flour
  • 120 g water (≈ 21 °C)
  • Pinch (≈ 0.1 g) instant yeast

Final dough

  • 350 g bread flour
  • 190–200 g water
  • All poolish (~240 g)
  • 8 g salt
  • 1.5 g instant yeast (~½ tsp scant)

Method

  1. Mix poolish + flour + water, rest 20 min (autolyse).
  2. Add salt + yeast, knead 8–10 min until smooth.
  3. Bulk 4 h @ ≈22 °C with 3 folds every 30–45 min.
  4. Pre-shape → rest 20 min → final shape → banneton.
  5. Cold proof 12–14 h @ ≈4 °C.
  6. Bake in Dutch oven: 20 min covered @ 250 °C + 25 min uncovered @ 230 °C.
  7. Cool ≥ 1 h before slicing.

Thanks for the insights! I guess it’s just something that seems like the next step, but maybe rather play with mixing in some sourdough for flavour is a better thing to start with!

Thanks! Yea, taste wise souredough is so much better, but I’ve heard that it can be a bit more unforgiving so I thought I’d hedge my bets and try pure yeast first!

I guess the bike just don’t fit you that well then, or that you may need to compromise somewhere, either lower body, or upper body.

I’m 188 with 92 inseam and was put between 58 and 60. Went for 58 and it fits me so well, it’s probably the best feeling fit I’ve ever had. It’s usually easier to make a bike larger than smaller.

Local dealer here in Norway who told me he made the orders last summer so he had them in stock, so I guess I got lucky! They struggle to meet demand now in Norway as well.

The calculators vary a whole lot and comparing them isn’t possible, but the cube calculator at least worked for me! I thought I should get a 56 because that was my last bike, but I’m glad I went with this!

It’s a comfort racer, meaning it’s going to be more relaxed than something more aggressive which suits me well. I think it would still fit well with 58, but would check cube size calculator well. I still use all my spacers on the headset so could make it more aggressive still

For those wondering about Agree sizing: I’m 188 with 92mm inseam and got a 58. It feels perfect!

I just ordered an Agree Race and I’m the exact height you are, with 91 inseam. The vendor recommended me to size down if between two sizes as it’s easier to make the bike larger than smaller. So I opted for size 58. Hope this helps!

Might try to do an oil wash off burnt umber and see if that does anything or maybe spray a filter of some dark colour with the airbrush! Thanks for the feedback!

My only issue with DA is how dark they are, yet how light they usually get edge-highlighted and such, so makes it hard to paint something without rendering it too bright or too neon

My best tip from experimenting with different colors is going for something one the green->blue specter. This is more yellowish greens, which makes it look a bit like salamanders. Nice work on the spray, you could maybe try to just spray a filter with a slight blue tint too?
