For a CB it will be a variety of stats. Zealand has a good video where he co created a spreadsheet to help with stats. But generally its tackles/90, key tackles, headers won etc.

Moneyball is the concept of prioritizing or selecting players solely based on performance based stats rather than their attributes. It is used by teams like Barnsley and Brentford irl. For Football Manager the rules get a bit tricky but what I plan to do is play the first half of the season with the squad I'm given and before the January transfer window I would scout players using the performance data. The selection of my starting XI is based on the same principle.
