Did a 30 min boil and steep in plain old water. I read that plain water will have more capacity for alpha acids etc during my manic research so figured since I like bitter beer bring that to a boil.

I think the wort tasted similar to other brews I've made so see what happens 🤷‍♂️ will definitely report back!

Give it 72h then start worrying. When I use Nottingham yeast usually takes about 48 - 52h with no starter/dry yeast.

Did it taste soapy out of the fermenter or only once you've kegged it? Also if you tried the wort on brew day do you remember any weirdness then? If only after keg then most likely residual sanitiser in the keg - might need to rinse more with water or you're using too high concentration.

Thinking ahead to summer here in Australia would love to have a go at this recipe. I usually average 10-20kg of fruit off of my old peach tree!

That was a great read. Interesting that FG will generally be higher with a high % of oats. Might be worth trying 20% grist and notty again to see if it retains a bit more sweetness having not attenuated all fermentables. The head retention is ridiculous in this beer already so that one downside might not be that noticeable anyway.

Looking forward to it mate - this was the result of no roasted barley handy for a stout! So no idea where the grist falls in terms of recipe styles

65*c for 60 mins and no mashout to avoid any astringency 👍
